It's Week 7 of The Great Social Distance Bake Off!
When I started this challenge, my plan was for it to go on for 10 weeks, the typical length of a season of The Great British Bake Off. I honestly thought we might all be close to resuming our normal lives by that time but that isn't looking likely. Whether I keep this going beyond 10 weeks or not is still up in the air but one thing is for sure - the next few weeks are meant to challenge you a bit more than previous weeks!
This week is Latin America Week!
Whether your only familiarity with a Latin American dessert is a churro or you grew up eating arroz con leche, this week you're to take on desserts from two different countries in Latin America.
I grew up in a pretty typical Latin American household - Dominican mom, Cuban dad - but as an adult, the only Latin cooking I do is when I make rice and beans so this is definitely going to get me out of my baking comfort zone as I take on some of my favorite childhood recipes!
This week, I made pasteles de guayaba, guava pastries! I grew up eating these and thought they would be so much more complicated than they were but with only 3 ingredients (puff pastry, cream cheese, and guava paste), they came together in about 10 minutes before I put them in the oven and they taste just as good as I remember them! I used a recipe from My Big Fat Cuban Family but added an egg wash so that the pastries would brown nicely.
